Variegated chicory

Appearance: Regular and even heads characterised by a small pink opening. Leaf-blade notched at the sides. Head with a portion of completely clean main root, however never longer than 3-4 cm. 

Colour: straw-yellow leaf-blade with a prevailing secondary venation with respect to the totally white back rib (however it is quite non-existent). Characteristic is the variegation of the leaf-blade in colours like: red, purple, pink and green.

Taste: rib, venations and leaf-blade with a pleasantly bitter taste and crackling as regards the compactness. Perfect ripening level, medium-large size, uniformity of the size and proportionate main root, however never longer than 3-4 cm.
