CAORLE (1)

On February 18th 2004 we went to Caorle, to visit Casetta’s farm with the foreign teachers, where the pleasant owners showed us the cultivation of red chicory explaining us the different qualities and phasesof production such as the whitening : when the red chicory is ready, the heads are tightened together so the light cannot pass through the leaves for about 15-20 days ; then they offered us the white wine they produce with Frittelle and Castagnole, typical Carnival’s sweets.
